Bean to Bar

We prioritize bean to bar chocolate which is when the chocolate makers focus on the flavour of the cacao bean to define the flavour of the bar.

The world of chocolate has been, and is still going through, a huge change. One which is redefining our understanding of “fine quality” chocolate. We like to work with the chocolate makers who are part of that movement and are producing such flavourful bars that they have you part of the movement too!

Yes and sometimes even better, the chocolate is Direct Trade. This means that the chocolate makers have a direct and transparent relationship with cacao farmers.

These chocolate makers want to buy  high quality and flavourful beans (quality vs quantity) and will pay more for these beans.

We retail Hummingbird Chocolate and Olivia Chocolat, who are the two bean to bar chocolate makers in the Ottawa area. We focus on Canadian chocolate makers and as such, we carry artisan chocolate that is made anywhere from Newfoundland through to British Columbia. We do not make our own chocolate.

Dietary Specifics

Chocolate is naturally gluten free so we are able to offer many brands that are gluten free. Many of the chocolate makers we partner with are making bars with simply cacao and organic cane.

You can verify each bar's ingredient list when shopping our Collection options.

In store we also carry a gluten free collection of truffles by Cocopotamus as well as other brands of bars not currently available on line.

Yes we do! All our dark chocolate bars are dairy free: The Clean and Pure, Oh Canada Dark and Wicked Dark are three of our Collections that are dairy free/vegan bars.

In the store we carry many other vegan options from Hummingbird Chocolate, SOMA Chocolatemakers, Desbarres Chocolate, Palette de Bine, Sirene, Olivia Chocolat, Organic Fair, ChocoSol Traders, Marou Faiseurs de Chocolat and Raaka.

This is a harder option in the world of chocolate, as many makers work with nuts and will add “may contain nuts” to the bars that may have come into contact with nuts. However, we are happy to say that we currently have these chocolate makers available in the Kanata shop that offer completely nut free: Olivia Chocolat, Palette de Bine, ChocoSol Traders, Marou Friseurs de Chocolat and Raaka all state on their packages and ingredient lists that their bars are completely nut free.

Please contact us to direct order a selection of our nut free, bean to bar chocolate over the phone.

Yes it is! The chocolate makers we work with do not use a sugar replacement and instead create bars that are 100% cacao, no sugar added, no sugar replacement used. Customers usually say “won’t that be bitter???” and we reply with, “no, these bars are just intense chocolate!” Check out the Wicked Dark Collection.

Chocolate Events

Yes we do! We host various events with different partners. We have Chocolate Tastings, Chocolate & Wine evenings, Chocolate & Cheese Pairings, Chocolate & Whisky, Chocolate & Tea, Chocolate & Beer and Chocolate, Cheese & Wine.

The best way to get advance notice of our schedule of events is to sign up to receive our emails. We send the information to our chocolate community first. Then we publish the events on our website, FaceBook page and present in-store signage about a week later. Event tickets sell quickly!

We like to have the schedule of all events planned on a quarterly basis, and give you at least a month's lead-time.

Most of our events are held at the store : 499 Terry Fox Drive in Kanata, Ont and occasionally we hold them at our partner’s venue. Details are in each event page.

We do not refund or exchange tickets after purchase. However we often have a wait list once the events sell out - in case someone needs to cancel. We will happily connect with our wait list to attempt to have someone purchase the tickets you can’t use. Please call the store at 613 435 7722 to speak to us about a possible resell.

Yes, we happily do chocolate events for just you and your group; at either our place or yours. Please contact us for the Chocolate Event info sheet.

Storing Chocolate

That depends on who you ask! Generally speaking, when stored properly, dark chocolate bars are best before 2 years; milk chocolate bars are best before 1 year and bars with inclusions (fruits and/or nuts) are best enjoyed between 6 months to a year. Many quality bars have “best before” dates, not “bad after” or expiry dates.

You can but it’s not necessary. If you do, keep in mind that chocolate absorbs aromas so keep it sealed and away from any food items that wouldn’t work well with chocolate :) Chocolate kept at room temperature will be fine and retain its flavour for a long time.
